What's Cookin'?

Today I'm cooking up some Roasted Baby Reds. Its a super easy side dish. You can season it anyway you'd like and I don't always season it the same way everytime we have it. You bake the potatoes at 350 degrees for about an hour or until the taters are all done.
Wash the potatoes and chop them into about the same size chunks. Since its just Josh and I eating tonight, I did 8 small potatoes. Use a square baking dish.
Coat the potatoes with a nice drizzle of Olive Oil. Sprinkle with salt, pepper, onion powder, and Ranch seasoning. I did not use the whole package of seasoning, just put the package in a ziploc and save the rest for next time.
The olive oil coats the potatoes and keeps the seasoning from being powdery. This is so yummy and is a great side!
Always remember to take a break from cooking and kiss the sweet sleeping angel in your living room.

milk coma & a smile

Today we are eating a lot, sleeping a lot, & playing a lot.
Caroline is a happy 3 month old!

the cow clock

While we were home visting our family last week we took Caroline to Chic Fil A. As soon as I sat down with her at the table, her little legs went to kicking so hard. I had no clue what she was so excited about until I saw the cardboard cow clock.
That little sweetie was so intrested in the cow in flame pajamas! Her little hand would reach out and swat at it, she just kept patting it and trying to hit it. I think she is trying to learn how to grab the things she wants. She kept kicking at him while her GG was holding her. Too bad they would sell or give us one...we did ask!

daddy's girl

We have so much drama in our home. When we found out in July 2010 that we were going to be parents to a daughter, it started. Josh began his saga of she has to be "well-rounded" and still be his "buddy". What he really meant was, I don't want a girly girl. So he bought her camo outfits and talks about taking her fishing. However, Caroline's mommy was buying dresses and pink bows. Since I'm home with her and get her dressed most days its not often that she's in camo. Even then she has a brown bow that she'll wear. A bow on that girl's head is a daily thing! Well her daddy thinks he's funny because he always takes it off the very minute he gets his hands on her. Apparently she is going to be more of a daddy's girl than we all thought....

stare down

Caroline was so happy when we woke up this morning. She was rolling around in her crib when I went in to get her up. Since she was so happy I let her have some playtime on her little activity mat. She was staring down her bug that hangs from it. She looked straight at it for the longest time. She is so adorable!!
